I would add to your comment on ethylene that it is more than a byproduct, it is actually a natural plant hormone that affects plant growth, development, ripening, and senescence (aging). Many fruits, like bananas, produce their own quantities of ethylene and respond with uniform ripening when exposed to an external source of ethylene, like from our catalytic generator.
