Ocean Mist Farms plans a day-long field and operations tour July 26 in Castroville, Calif., as the Produce Marketing Association Foodservice Conference and Expo kicks off.

The conference runs July 26-28 in nearby Monterey, Calif.

The tour, part of the PMA Fresh Produce Academy, will feature Brussels sprouts. From the field, tour participants proceed to Ocean Mist’s cooling facilities and its corporate kitchen, where chef Tony Baker is scheduled to demonstrate fresh Brussels sprouts applications. He’ll serve a roasted entrée featuring the vegetable, according to a news release.

Baker will also appear July 27 in the chef demo challenge at the conference. A past winner of the event, he will make citrus shaved Brussels sprout salad with grilled Florida shrimp and lemon-fennel vinaigrette.

Ocean Mist Farms will exhibit fresh vegetables July 28 in booth 147 at the expo in Monterey.
