Sebastopol, Calif.-based Gourmet calls the variety the Heirloom Shiitake. The vareity is a thick and meaty variety known for its flavor, according to a company news release.
Like all of Gourmet’s mushrooms, the Heirloom Shiitake is certified organic.
The variety is now available in Grade A large and small; Grade B; and a baby shiitake version.
The Heirloom Shiitake is “carefully graded for excellence” and harvested “at the proper maturity with the edges of the cap distinctively inrolled,” according to the release.
