The Alliance for Potato Research and Education is sponsoring a seminar to tout the nutritional benefits of white vegetables.
The McLean, Va.-based organization is scheduling “White Vegetables: Addressing the Nutrition Gap” symposium on April 19 in Boston, preceding the American Society for Nutrition’s annual meeting and scientific sessions, April 20-24.
At the event, seven food and nutrition scientists are scheduled to highlight research and product innovations that explore the nutritional benefits of white vegetables, particularly potatoes, according to a news release.
Topics include how scientific advances in preparation methods and processing technologies affect white vegetables’ nutrient profiles and the role white potatoes play in dietary guidance and policy, according to the release.
