Lisa Schroeder, a chef at Mother's Bistro & Bar in Portland, Ore., starred in the California Avocado Commission’s June media dinner that was part of a much larger California Avocado Month celebration.
During the multi-course meal for 15 local food media, Schroeder showed off the versatility of avocados while providing facts about the green fruit, according to a news release.
Among her avocado-centric offerings were a California avocado, pink grapefruit and dungeness crab cocktail, California avocado and bacon macaroni and cheese, and a California avocado key lime pie.
Schroeder was just one of many artisan chefs nationwide who were invited to develop and promote recipes that showcased California avocados in their respective restaurants.
Seattle chef Eric Tanaka, for example, ran month-long specials at three Tom Douglas properties, while Carol Wallack of Sola, Chicago, featured a June special of unagi (fresh-water eel) atop sushi rice, drizzled with sweet soy-sake BBQ sauce, accompanied by California avocado and banana puree.
“The Commission continues to tap into the creativity of artisan chefs to encourage new uses for California avocados,” said Jan DeLyser, commission vice president of marketing, said in the release. “These chefs put together some awesome menus highlighting California avocado versatility throughout CAC’s California Avocado Month program in June.”
California Avocado Month is timed to coincide with the peak of the crop and create momentum for summer-long programs.
