The New York-based foodservice distributor’s “Bite, A Tasty State of Mind” show in Manhattan drew nearly 1,000 chefs, bloggers and foodservice and retail customers and included 125 exhibitors, said Mike Muzyk, Baldor president.
The April 21 event included panel discussions and chef demonstrations.
Exhibitors talked with chefs to learn what they desire when creating dishes, Muzyk said.
The evolution of food in New York and the importance of ingredients as well as the changing customer was a topic discussed in one of the panel discussions, he said.
“Today’s customer is very educated on food and understand it quite a bit,” Muzyk said. “You have to be able to respond to that by either reinventing yourself or doing things differently. Local was also a big topic in helping connect that upstate farm to the downstate and farming in general was discussed and what it means to get back to those roots and the importance of the farm.”
Baldor plans to host the show every other year.
