The Chilean Fresh Fruit Association won the Sensory Experience Contest at the Produce Marketing Association’s Foodservice Expo this year with its Chilean Fruit Medley Gazpacho with Grape, Bacon and Brie Melt.
The recipe was created by Chef Don Cortes.
“The versatility, flavor and beauty of Chilean fruit joined with Chef Cortes’ skill and creativity to create this standout recipe,” Karen Brux, managing director of the Chilean Fresh Fruit Association, said in the release. “We are honored to be recognized by such an impressive panel of foodservice professionals and look forward to seeing what we can create for next year’s Expo.”
Eleven foodservice professionals were on the judging panel, includng representatives from Brinker, Produce Alliance, Pro*Act, Sysco and Southern Specialties. The judges selected the association’s dish from among 10 finalists.
Recipes were judged on being produce-centric, innovative, visually appealing and kid-friendly. As the winner, the association will receive second choice of booth location at next year’s foodservice expo.
