A potato waffle recipe took first place in the Wisconsin Potato and Vegetable Growers Association’s Cinco de Mayo contest.
Its theme was “Celebrate Cinco de Mayo.”
Nancy Judd of Alpine, Utah won the top prize with her Cinco de Mayo fiesta potato waffles, according to a news release. Recommended sides are avocados, fresh cilantro, salsa and sour cream. Judd’s prize is an iPad.
Second place went to butter crisp Mexican potato cakes with avocado cream by Suzanne Clark of Phoenix. The cakes combine sweet and golden potatoes; chayote squash or zucchini; corn; jalapeno; and diced red and green peppers with crumbled queso fresco or feta cheese. They’re topped with avocado cream. Recommended pairings are chorizo, eggs and a margarita.
Third place was braised mole chicken and potatoes by Kadija Bridgewater of Deerfield Beach, Fla. It combines chicken and Wisconsin red potatoes with onion, serrano peppers and Pasilla peppers. The mix is flavored with cinnamon, cumin, lemon and chili powder and cocoa powder.
Clark and Bridgewater received $150 and $100 gift cards, respectively, to grocery stores. Natalie Tedder, Bakersfield, Calif., was the randomly-drawn winner of a $100 Amazon.com gift card.
The Antigo, Wis.-based WPVGA began offering retailers downloadable Cinco de Mayo recipe tear pads and point of sale materials online May 1.
“Our fans have clearly demonstrated just how versatile Wisconsin potatoes are with this diverse selection of recipes — everything from stews and salads to desserts and waffles featuring Wisconsin potatoes,” Dana Rady, the association’s director of promotion, communication and consumer education, said in the release.
The nonprofit has more than 300 members and affiliates.
