The California Avocado Commission has been promoting the use of avocados as a substitute for baking ingredients like butter and shortening.
One cup of mashed avocado, for example, can replace a cup of butter in any muffin, cupcake or quick bread, and even some brownie and cookie recipes. Substitutions involve equal amounts.
Examples of such baking recipes with holiday themes on the commission website include a California avocado pumpkin cupcake. Other items touting the idea include avocado blueberry muffins and Avocanana bread, plus cookie and cake recipes.
The resulting reduction in fat, calories and sodium is in step with its marketing of avocados for nutritional benefits, according to the Irvine, Calif.-based commission. There are 50 calories in two tablespoons of avocado compared to 204 in two tablespoons of butter, for example.
