red-veined sorrelCourtesy Koppert Cress USACutchogue, N.Y.-based Koppert Cress USA has introduced red-veined sorrel as a microgreen produced in its Long Island, N.Y., greenhouse.

As the name implies, plant leaves have dark red veins down the middle of lime-green leaves.

Leaves are harvested before they become bitter — at about 1-inch long — giving them a taste more like fresh lettuce, according to a news release. They can be used in salads, soups or entrees.

The crop is grown hydroponically using hazard analysis and critical control point-certified practices and environmentally friendly biological control programs.

Koppert Cress offers the product year-round in 4-ounce tamper-evident clamshells.
