Midwest show features boundary-pushing chef

The Packer has selected Chicago chef Homaro Cantu as this year’s Midwest Produce Expo keynote speaker.

Homaro CantuCantuInternationally known as leader in the field of post-modern cuisine, Cantu is recognized for pushing the limits of known taste, texture, technique and delivery systems at Moto Restaurant in downtown Chicago.

On Aug. 12 before the opening of expo hours, attendees can hear Cantu’s perspectives and imagination on food and how fresh fruits and vegetables fit into his creations.

He develops new culinary trails to help change peoples’ perceptions of food and eating habits.

During his talk, Cantu plans to present photos and videos of his work and let attendees taste some of his creations.

“We’re excited that our attendees will be exposed to such a unique personality as Homaro, a true food icon of Chicago,” said The Packer Publisher Shannon Shuman. “I think his ideas will be inspiring for all levels of the produce industry from growers to packaging to marketers and retailers and merchandisers.”

Hosted by The Packer, the Midwest Produce Conference & Expo is scheduled for Aug. 11-13 at the Hyatt Regency in Chicago, the same venue as 2013.
