Blogger Amie Valpone of “The Healthy Apple” and the Idaho Potato Commission have partnered for National Celiac Awareness Month in May.

To help raise awareness the partners will create five gluten-free recipes.

Celiac disease is an autoimmune disease. For people affected with the disease, eating gluten causes inflammation in the lining of the small intestine.

The five recipes and more can be found at http://recipes.idahopotato.com/tag/gluten-free/.

It is very, very, very stupid for one branch of agriculture to attack another to gain market share. Amie Valpone must be a jerk and the same can be said for the Idaho Potato Commission. Imagine if the Pork Council or American Beef producers put money into advertising the chemical residue levels in Apples and Potatoes, which can appear to be very high in comparison to other fruits or tubers.. This is really a Junior High Mentality action on their part.

For those individuals with a Celiac issue, the only folks who truly need a gluten-free diet, this could be helpful. A hat tip to the Idaho Potato Commission. Bravo!
