Responding to the 2011 foodservice trend predictions, Dole Food Co. has introduced a list of fruit pairings list.
The company enlisted its operator base to help create the food pairings with its second annual fruit ranking survey. The top five combinations reported from the survey, according to a news release from Dole, were:
- mandarin oranges and chicken;
- apples and pork;
- mandarin oranges and yogurt;
- strawberry and almonds; and
- blueberry and cranberry

Operators can also download a copy of Dole’s quick reference fruit pairings wheel by completing a short survey.
The fruit pairings shown on the wheel are designed to provide foodservice operators with appealing combinations of proteins, aromatics, dairy and produce.
