A student at the Texas Culinary Academy is the winner of the USA Pears Culinary Student Recipe competition.
John Paugh won with his pear and scallop appetizer, according to a news release from the competition’s host, the Milwaukie, Ore.-based Pear Bureau Northwest.
The second annual event was March 31 in Portland, Ore. Judges included chefs and food editors. Paugh’s recipe was chosen from almost 100 entries.
The pear bureau uses the competition to educate future chefs about the versatility of pears in cooking, Dennis James, the bureau’s marketing director, said in the release.
A similar competition is planned for Canada later this spring.
