VANCOUVER, British Columbia — Canadian chef-in-training Stephanie Duong won the Pear Bureau Northwest’s Pear Excellence recipe competition with a pear pancake creation.
The Canadian culinary student competition, awarded during the Canadian Produce Marketing Association’s annual conference and expo in Vancouver, was at the Culinaria Restaurant at The Art Institute of Vancouver May 11. Duong’s Spiced Pear Buckwheat Pancakes with Pear Caramel Sauce and Mascarpone Cream netted her $5,000 in the competition against four other finalists, who each received $1,500.
“I wanted to create a pear recipe that could be served both as an entrée at breakfast or as a dessert at dinner,” Duong said in a news release.
Judges focused on Duong using pears in both the pancake batter and the caramel sauce.
“The pear flavor really comes through in this recipe,” judge Karen Barnaby, cookbook author and executive chef of The Fish House in Stanley Park, Vancouver, said in the release.
The pancakes will be featured at the art institute’s Culinaria Restaurant for a month.
