A new cocktail tomato from MCM Acres Ltd. features a three-color ripening cycle, with consumer uses at each level.
The Sienna, introduced in March, is a brown variety that has different applications at each of its three ripening stages, said Gregory Brinkmann, project manager of the Leamington, Ontario-based company:
- Green stage: 50% of the fruit is green, 50% light brown. Perfect for soups, stews and kabobs.
- Mid stage: 10% green, 70% brown, 20% red. Kabobs, slicing.
- Red stage: 80% brown, 20% red. Ready-to-eat, salads.
About 1,000 pounds of the Sienna, are shipping weekly, Brinkmann said. The variety, comparable in size and shape to a Campari, is high in sugar and has a thick wall ideal for food preparation, he said.
