Hy-Vee increases focus on in-store dining format

An in-store dining initiative begun by Hy-Vee Inc. in 2012 has been so popular that the retail grocery chain plans to revamp 75 of its stores in the coming three years to include Market Grille or Market Café restaurants.

The newest Market Grille, No. 4 for the Midwest chain, is at the new Hy-Vee in Waukee, Iowa, which opened in late August. Described on the Hy-Vee website as a full-service restaurant and bar, the Market Grille includes a made-to-order sushi bar.

The store in Waukee is 90,000 square feet and includes 1,400 produce items among the 60,000 stock-keeping units it offers, according to a news release. Brandon Lampkin is the director of the new location, which also has a tasting room next to its walk-in beer cooler.

In the Kansas City area, two Hy-Vee stores were combined early this year and reopened at a new location in the suburb of Overland Park, Kan. The 78,000-square-foot store has a Market Grille bar and dining area overlooking the main store floor and a downstairs dining area.
