Officials with the Idaho Potato Commission were expecting participating in their Potato Lovers Month display contest to almost double this year.

This is the 22nd year for the contest, said Seth Pemsler, IPC vice president of retail.

“We know for a fact that this will be a record year, well beyond any of the prior 21 years because of the inclusion of some new large retailers,” Pemsler said in late February. He declined at that point to name the new participants.

The record number of entries for the IPC contest is about 2,600, Pemsler said. He anticipated the commission would receive close to 4,000 entries by the end of February.
