Idaho Potato Commission holds display contest

The Idaho Potato Commission, Eagle, is in its 23rd year of promoting its Potato Lover’s Month Display Contest.

This promotion ran from Jan. 27 to Feb. 28, encouraging retailers to put up an Idaho potato display.

This year marks the commission’s second year of partnership with Hormel bacon bits for the contest.

Despite a successful year last year, Seth Pemsler, vice president of retail/international, is even more excited about the growth opportunities the partnership brings as it moves forward.

“Last year they weren’t as familiar with the contest but now they’re ready to better leverage their resources and influences,” he said.

Because of the added connections Hormel brings to the contest, Pemsler expected submissions to top last year’s record of entries.

“We know for sure it’s the largest vegetable display contest,” he said.

Pemsler said Hormel has already committed to the partnership again next year.

“We’re looking forward to them helping us expand the program,” he said.

This year also marks the second year of the commission sponsoring a separate but similar contest in the Caribbean.

“Those locations can’t compete with major U.S. retailers but it’s a growing program. We have a number of retailers already committed for this year,” Pemsler said of the Caribbean contest.

In the future, he’s hopeful about sponsoring a Potato Lovers display contest in Mexico as well, after the border opens up to allow more potatoes in the country.

The commission also recently finished its Russet Recipe Rescue competition, in which five recipes were selected for a healthy makeover.

Winning recipes:

  • Baked Potato Pizza, submitted by Tracy Murphy;
  • Ragin’ Chili Cheese Fries, submitted by Jeremy Gaza;
  • Rakot Krumpli, submitted by Agota Merrell;
  • Creamy Russet Chowder, submitted by Candy Barnhart; and
  • Fish and Potato Hot Salad, submitted by Hidemi Walsh.
