(March 10) Downtown Boulder, Colo., may have its own gourmet fresh potato restaurant, according to the Boulder Daily Camera.

The eatery is being proposed by owners of a new venture called Spud Brothers for a former 700 square-foot retail location.

The restaurant would have fried, half-fried/half-baked and baked potatoes on its menu, plus gourmet sauces, James Rinker, operations manager, said in the article.

The restaurant would also tell the stories behind the potatoes and the farmers who grew them.
