Restaurants leveraging fresh produce, including Subway, Chipotle, Panera, rise in recession

The national restaurant chain imploring Americans to “Eat Fresh” has made a move on McDonald’s.

Although McDonald’s still topped the sales rankings for 2008, according to one industry survey, Subway displaced Burger King for the No. 2 slot.

Other fast-growing chains included Chipotle and Panera Bread, which also use fresh produce as an anchor to their menu selections, according to the Nation’s Restaurant News survey.
