White asparagus volumes from Peru could be down this year.

Pompano Beach, Fla.-based Southern Specialties will source white and purple asparagus from Peru this year, but white production will likely be down, said Carlos Solf, procurement director.

“Supplies of white will be slightly less as canning prices continue to rise, compelling the farms to produce less,” Solf said.

White asparagus was selling for a premium in the U.S. in late spring and early summer, said Jeff Friedman, president of Pompano Beach-based CarbAmericas Inc.

“It’s been in the mid-$20s for a couple of months. Normally it’s $15 or $16,” Friedman said.

The market is more likely supply- than demand-driven.

“What I’m hearing is, there’s a shortage of white asparagus,” Friedman said.

Carb Americas expects to bring in similar volumes of white Peruvian asparagus as last year, Friedman said.

“We’re not a large (player),” he said. “We bring in 800 to 1,000 boxes a week to meet the needs of our foodservice and retail customers.”

White and purple asparagus from Peru are up-and-comers, said Peter Warren, marketing and sales director for Pompano Beach-based Ayco Farms Inc.

For Ayco, they haven’t up and come very far, however.

“Retailers are interested, but they don’t sell that much,” he said. “We don’t do a lot.”
