Prepping artichokes, for me, is a lot like prepping for surgery with all kinds of tools and implements. It usually takes me at least an hour to an hour and a half from starting prep to sitting down and eating, so artichokes aren’t really an impulse “What’s for dinner tonight?” kind of buy at the store, and that’s kind of sad because we love to eat artichokes in this family.
