More than 30 Omni Hotels & Resorts locations will feature avocados on their poolside menus this summer.

The fruit will be used in food and beverage recipes, according to a news release.

“We’re thrilled to partner with the talented chefs at Omni Hotels & Resorts and see their culinary creativity come to life with this summer’s menu,” Mark Garcia, director of foodservice marketing at Avocados From Mexico, said in the release. “While Avocados From Mexico are enjoyed year-round, they’re a particularly refreshing addition to a warm summer day.”

Omni executive chefs Daven Wardynski, Jason Adams, Jonathon Stutzman and Robert Ash put together the collection of dishes, which includes Avocado Spring Rolls, Charred Onion Guacamole, Avocado Grilled Cheese and a Sonoran Hot Dog that comes with avocado bean spread, avocado mayo, bacon, mustard and tomato.

“Avocado continues to be a trending ingredient — and it’s obvious why,” David Morgan, vice president of food and beverage at Omni Hotels & Resorts, said in the release. “It’s not only nutrient-rich, but it’s an extremely versatile ingredient. Our chefs are getting really creative with dishes that embrace the classics but also go beyond the traditional applications of avocado.”

Cocktails developed by Kim Haasarud include the Jalapeno Avocado Margarita and the Mango Ancho Avocado Margarita.
