August’s Harvest Inc., one of Ontario’s largest commercial garlic farms, has completed a successful pilot project in its quest to supply local garlic 365 days a year.
In December, when the bulbs start to decay, they’re divided into cloves and sold in 150-gram packages, which helps prolong the season, said president Warren Ham, who farms 100 acres just north of Stratford.
“Retailers say their biggest single request is for local garlic,” said Ham.
