Limoneria spokesperson and registered dietitian Megan Roosevelt has prepared three lemon-inspired recipes for back-to-school meal prep.

Each month Roosevelt will share weekly videos of recipes, do it yourself tips and other ways to use Limoneira citrus on Limoneria’s Youtube channel, according to a news release.

Her recipes are:

Cubed Lemon Chicken

3 tbsp Limoneira Classic Lemon juice
3 tbsp extra virgin olive oil
2 tsp cumin
1 tsp sea salt
½ tsp black pepper
2 boneless chicken breasts

Mix lemon juice, olive oil and dry ingredients together to form marinade and marinate chicken breasts for 30 minutes. Bake for 30 minutes at 350° F or until fully cooked. Cube chicken breasts. Portion into a container along with brown rice and broccoli, and store until needed.

Lemon Pasta with Peas

Pasta of choice
3 tbsp olive oil
Salt & pepper to taste
½ cup cooked peas
1 Meyer Lemon
Green onion

Cook pasta of choice, and mix ingredients together in a mixing bowl. When combined, portion into a container along with Pistachios and orange slices until needed.

Lemon Hummus 

1 can chickpeas
2 Limoneira lemons
¼ cup tahini
2 garlic cloves
1 pinch sea salt
3 tbsp olive oil

Combine all ingredients into a food processor and blend. Spread hummus onto tortilla of choice. Add celery to create the rollups. Then cut into bite size portions, and add to a container alongside carrots, raspberries and green peas to complete the meal.
