The National Watermelon Promotion Board’s first experience as an exhibitor at PMA Foodservice resulted in its watermelon escabeche winning the Sensory Experience Contest.

Chef Jose Manuel Martinez from University of California, Berkley, made the escabeche, which layers scallop ceviche with fresh watermelon, watermelon curtido, cilantro, and a rosewater-infused foam finish, according to a news release.

“Chef Jose’s creativity and passion for watermelon was apparent in the recipes as well as his explanation of the dishes, especially the escabeche,” said Megan McKenna, the promotion board’s director of foodservice and marketing, in the release.

The NWPB’s booth and contest entry this year mark the first time that the board has participated at PMS Foodservice.
