EARTH FRESH: Burlington, Ontario-based Earth Fresh Foods is testing a new combination of potatoes, the NutriSpud Vitality, which includes a mix of yellow-skin/yellow flesh, red skin/yellow flesh and purple skin/purple flesh, says Stephanie Cutaia, marketing manager. The blend is designed to promote the highest nutrient potatoes available, with 566 mg of anthocyanins per serving versus 137 mg in a serving of standard russet burbank potatoes.
