Texas Green Squash Cassoulet wins chef's contest
Squash helped a chef win the Farm to Table Chef's Taste Challenge second annual competition at the Ernest N. Morial Convention Center in New Orleans.
Eric Cook of the American Sector Restaurant was named champion for his Sugarshine Glazed Gulf Shrimp and Texas Green Squash Cassoulet at the Aug. 19 event, according to a press release.
Chef Lee Anne Wong was named runner-up for her dish Thai Style Fried Quail, Heart of Palm, Mayhaw Chili Glaze, and Chef Henry Chandler of Henry's Louisiana Grill was awarded the Fan Favorite award for his Farm Boy's Feast, a braised beef inside round with mushroom and chickpea saffron risotto.
The Chef's Taste Challenge invited chefs from across the U.S. to create the best dish that utilized farm-fresh items from a local pantry of both seasonal local ingredients and products donated by the State Agricultural Departments, according to the release.
