New York-based Bowery Farming is developing plans with the state of Pennsylvania to build an industrial site in Bethlehem, Pa., into one of its vertical farms for year-round greens.

“Adding our newest, most sophisticated smart indoor farm in Bethlehem to our network is a critical next chapter in our growth,” Irving Fain, founder and CEO of Bowery Farming, said in a news release.

This location will be the most high-tech of Bowery’s farms, further automating the process from seed to store. There will be energy-reducing LED lighting and a water transpiration system to recapture water from its plants, with the goal of reclaiming nearly all of the water used in its growing process.  

Since the beginning of 2020, Bowery has had more than 600% brick-and-mortar sales growth, from 100 stores in January to 680 stores today, according to the release. The company has more than doubled sales with e-commerce partners, including Amazon.

Bowery’s growing technology includes a proprietary software system, the BoweryOS. The company delivers to the tri-state area and Mid-Atlantic region, through Amazon Fresh and to Giant Food, Hungryroot, Stop & Shop, Walmart, Weis, Whole Foods Market and specialty grocers. 

Bowery Farming has raised more than $172.5 million from investors.
