The U.S. Department of Agriculture recently issued new per capita availability numbers for fresh produce. Let’s dive into some of the numbers.
Overall, the trend is encouraging. Fresh vegetable per capita availability is rising, from just over 150 pounds in 1970 to close to 200 pounds per capita now. Imports, as the chart shows, have played a pretty big role in recent per capita gains.
Of all veggies, carrots have shown the most remarkable recent growth.
