The U.S. Highbush Blueberry Council recently partnered with TikTok food influencer @justine_snacks to create a recipe for vegan blueberry white chocolate chip cookies. The baked good's bright purple hue quickly caught eyes online and was picked up by consumer sites like Real Simple and Good Morning America.
We at The Packer first saw these creative confections when Jennifer Sparks, vice president of marketing and communications for the USHBC, shared the Real Simple post on LinkedIn — which made it into our weekly Seen on Social roundup, curated by Northeast editor Amy Sowder.
Amy and copy and design editor Amelia Freidline love a good food trend (often the weirder, the better) and are also avid home bakers, so they couldn't pass up the opportunity to try making these produce-packed cookies themselves.
