Cosmic Crisp apples star in a recent episode of “Food Finds” on CNN Travel’s Food and Drink channel.

Cosmic Crisp apples star in a recent episode of “Food Finds” on CNN Travel’s Food and Drink channel.

Chef Chadwick Boyd uses the apples for his Everyday Apple Celebration Cake. Meanwhile, the shining, red apples are piled in bowls and on the counter in the studio kitchen.

The recipe specifically suggests the Cosmic Crisp variety for the five apples in the ingredient list.

In the episode, Boyd visits an orchard in Washington to talk with a grower and learn more. The apples are classically bred and exclusively grown in Washington.

“They bake really well because they’re higher in acidity, and they’re grown to be large and extra juicy,” he said in the video. “They also stay fresh longer.”

Boyd poaches the apples to make the cake.

He provides a tip: To store your apples, put them in a resealable bag with a damp paper towel. “That way, they stay more crisp,” he said.

In this recipe, the cake’s apples aren’t done the way many home cooks would expect.

“Who knew you could bake a whole apple inside of a cake?” Boyd said as he served a slice onto a plate.
