‘Mushroom Mania’ and ‘Fresh Innovation’ among Kroger food trends for 2021

Two of Kroger’s seven food trend predictions for 2021 put a focus on fresh produce: Mushroom Mania and Fresh Innovation.

Two of Kroger’s seven food trend predictions for 2021 put a focus on fresh produce: Mushroom Mania and Fresh Innovation.

“Forget Silicon Valley — consumers can find the latest emerging technology in their local produce aisles,” the company wrote in a news release. “From no-cry onions to in-store hydroponic farms to plant-based coatings like Apeel that extend the shelf life of produce, shoppers will see more innovative solutions launch in the coming year to help keep their favorite fruits and vegetables at the peak of freshness longer.”

As examples of products to try related to the Fresh Innovation trend, Kroger listed a number of fresh produce items and emphasized its store brands: Simple Truth Organic Honeycrisp Apples, Kroger Happy Eyes Sweet Onions, Kroger Fresh Avocados and Kroger Fresh Limes.

As for the Mushroom Mania trend, Kroger declares that 2021 will be a breakout year for fungi. In the release, Kroger calls out mushrooms as “rich in antioxidants, vitamins and minerals” and praises their ability to “easily elevate everyday recipes (with) warm umami flavor.”

The company wrote that consumers should also expect to see plant-based options, spices and seasonings incorporating mushrooms also.

Other food trends Kroger listed included “futureproof foods” — often described elsewhere as functional foods — that provide benefits for the immune system, gut or brain or help with energy levels and stress management. Comfort foods were another projected trend, as were “ketotarian” options, defined as plant-based products high in protein.

Kroger also expects consumers to look to global flavors and restaurant favorites as recipe inspiration as they continue to cook more at home, and the retailer’s research shows that many people are also working to limit their food waste and choose sustainable products in the year ahead.
