Paul Lightfoot founded his controlled environment agriculture farm in Irvington, N.Y., at the right time.
Five years earlier, and the ag industry wouldn’t have been ready. Five years later, and he would have been too late, as the high-tech indoor ag sector has exploded since.
He also spearheaded what became an apparent need as more companies sprouted up: the CEA Food Safety Coalition to create food safety standards and labeling unique to this indoor ag sector.
That labeling will help retailers and shoppers make purchase decisions, and also protect consumers as well as reduce confusion among CEA companies.
But Lightfoot has been working on several other initiatives. In this video interview with The Packer’s editor Tom Karst and retail editor Amy Sowder, we talk about his Negative Foods newsletter: foods produced that go beyond a neutral carbon footprint, venturing into the negative (which is positive for our environment and humanity) sphere.
Innovation may just be the foundation of most projects Lightfoot undertakes.
