The Produce Safety Alliance has developed a document explaining the difference between cleaning and sanitizing after some growers expressed confusion to regulators.

The Food and Drug Administration and states that conduct on-farm inspections informed the United Fresh Produce Association of the situation, according to an e-mail update from the association’s Food Safety Community.

The Produce Safety Alliance explains the difference between sanitizing and cleaning, and why it matters in the document. The message, basically, is that unclean surfaces cannot be sanitized, and that cleaning must be done before sanitizing.
