Consumers dish on potato preferences in Fresh Trends survey

The most favored potato variety is still the russet, according to The Packer’s Fresh Trends 2023 survey.

Asked what varieties of potatoes were preferred to purchase, consumers who purchased fresh potatoes responded with these results:

  • Yukon: 26%.
  • Russet: 52%.
  • Red: 41%.
  • White: 36%.
  • Purple: 9%.
  • Fingerling: 14%.
  • No preference: 16%.


In another question, consumers said they use potatoes in virtually every possible way, according to Fresh Trends survey. Potatoes are not just a side-dish delight, but that is the biggest use, consumers said.

Asked the question, “Which of the following phrases, if any, describe all of the ways you use potatoes?” consumers who said they purchase potatoes responded:

  • As a main dish: 37%.
  • As a side dish: 72%.
  • As a snack: 18%.
  • As an appetizer: 18%.
  • As an ingredient in a recipe: 52%.
  • As a salad: 18%.
  • As a dessert: 5%.
