Acquired by Wilcox Fresh this year, Southwind Farms, Heyburn, Idaho, specializes in gourmet fingerling potato production, said Juan Juarez, general manager of Southwind Farms by Wilcox.
“Our collection of fingerling potatoes includes Russian Banana, Purple Fiesta and Red Thumb varieties,” Juarez said. “Our products are handpicked, ensuring that only the very best gourmet potatoes make their way to our customer’s table.”
Acreage, yield and quality are similar to last season, he said.
“We service a niche market with an array of quality fingerling potatoes,” he said. “Our products are attractive to farmers markets and specialty grocery stores.”
With recent consumer trends for new items in cuisine, Juarez said South Wind Farms by Wilcox fills that growing market demand nicely.
“It is a win-win opportunity for our consumers and our product line,” he said. “Our new company structure will allow us to serve a larger audience.”
