Already, 2025 is shaping up to be a strong year for Idaho Falls, Idaho-based Eagle Eye Produce, said Coleman Oswald, director of sales.

“We are making key investments to improve efficiency across our operations and continue delivering the best quality for our customers,” he said.

The company is upgrading the packing facility at its flagship warehouse in Idaho Falls with new artificial intelligence sorting equipment for red and yellow potatoes.

“This builds on the AI and robotics already in place to pack russet potatoes at that same facility, bringing another level of precision to our operation,” Oswald said.

Since potatoes are a high-volume business with tight margins, the only way to stay ahead is through innovation, he said.

“We are always looking for ways to be more efficient, improve quality, and add value for our customers,” Oswald said.
