Idaho Potato Commission releases kid-friendly recipes

The Idaho Potato Commission released a collection of kid-friendly recipes, with the back-to-school selection of offerings taken straight from the organization's website.

Recipes for afternoon snacks like the Crispy Sesame Idaho Potato Puffs and school lunches like the Pittsburgh-style Chicken 'N Fries Sandwich were compiled from among the existing 1,000 recipes on IPC's website, according to commission president and CEO Frank Muir, in a news release.

"We've selected our favorites that are most appealing to kids and parents when it comes to prep time, nutrition and most importantly, taste," Muir said in the release.

Some of the recipes, such as the Idaho Potato Dinner Pizza Frittata, can be prepared beforehand and put in the oven closer to dinner in order to reduce preparation time. The Pizza Frittata, along with some other recipes, are also gluten-free.

"We know that back to school is a busy and sometimes stressful time for parents, especially when it comes to meal planning," said Muir in the release.

The recipes, available at www.idahopotato.com, should allow parents to be more stress-free as the school year kicks into gear.
