Pink lettuce arrives for Valentine’s Day
J. Marchini Farms is a year-round supplier of chicories (radicchio, treviso, and castelfranco) as well as Italian specialties and a fresh fig program. However, they will soon be known for a new chicory, Radicchio Rosa! They are now going into their fourth year of harvesting the infamous pink Radicchio. Radicchio Rosa is known in Italy as Radicchio La Rosa del Veneto and is known in the United States as pink lettuce, pink chicory or millennial pink Radicchio. The various shades of pink are beautiful to add to a salad-just in time for the upcoming Valentine’s Day celebration.
Radicchio Rosa is a loose-leaf head with vivid pink colors ranging from blush to magenta. Its leaves are delicate and tender, similar to Castelfranco, and the flavor profile is mildly bitter compared to other Radicchio varieties. Radicchio Rosa is typically enjoyed fresh in a salad with and can be enjoyed as a radicchio-only salad or paired with another lettuce such as butter lettuce or arugula for a peppery pop. Rosa is showstopper and will give any side dish that pop of love.
