Sales of recently launched fresh salads from FiveStar Gourmet Foods Inc. are exceeding projections, according to the Ontario, Calif., company that collaborated with Costco Wholesale Corp. to create the Simply Fresh brand product lines.

Several varieties are available in the Simply Fresh Organic and Simply Fresh Gourmet lines, according to a news release.

"We created these two salad lines to fill a major void in the marketplace for affordable gourmet salads. Our retail partners were also asking us to combine our restaurant quality expertise with our organic capabilities for the fresh salad segment," FiveStar CEO Tal Shoshan said in the release.

The salads feature fresh produce from California, which is harvested the night before the finished packaged salads are sent to Costco locations, according to the release.

"Our facilities are strategically located near our growers," Shoshan said in the release. "Produce picked the night before arrives at our state-of-the-art facilities in the early morning, where it"s prepared and packaged with our freshly made gourmet dressings and a wide array of salad toppings.

"Advanced modified atmosphere packaging ensures extended shelf-life without the use of preservatives, so the product arrives and stays fresh until it can be enjoyed. It"s not rocket science, it"s Simply Fresh."

The plastic bowls for FiveStar"s salad lines are made from recycled materials. The salads include romaine lettuce, dried cranberries, onions, mixed greens, fresh-cut apples and tomatoes.

Why are these salads no longer available at Costco in San Diego area?

Could you please start using better lettuce. I love the idea of this salad but every time I buy one - half of the salad is the white heart centers of the romaine & they are always horrible. For the price - you should be putting more of the healthy green parts of the Romain.

I agree with Tawnya regarding putting better lettuce. I noticed that most of the salad is the white heart centers of the romaine.
