Ocean Mist brings Chef Vacca to PMA Foodservice show

Ocean Mist is bringing chef Christopher Vacca to the Produce Marketing Association’s Foodservice Conference & Expo to create Tuscan Style Braised Baby Artichokes to sample on the show floor.

Ocean Mist is bringing chef Christopher Vacca to the Produce Marketing Association’s Foodservice Conference & Expo to create Tuscan Style Braised Baby Artichokes to sample on the show floor.

Vacca has an extensive foodservice background, working at a range of restaurants, from fine dining establishment to fast-casual and food trucks, according to a news release. He has been a menu developer, restaurant owner and executive chef, according to the release.

“It’s an honor to bring this caliber of chef to an industry event like the annual PMA Foodservice Conference where his experience is so highly valued,” Diana McClean, senior director of marketing at Ocean Mist Farms, said in the release. “Chef Chris has always done an incredible job elevating artichokes at the annual Castroville Artichoke Festival, so we’re really looking forward to him sharing insight on foodservice trends with our partners.”

Ocean Mist will showcase several products focused on convenience, including baby artichokes, Brussels sprouts foodservice packs (whole, halves and shreds in three- and five-pound bags), and broccoli florets in three-pound bags, according to the release.

The expo is July 27 in Monterey, Calif., and Ocean Mist will be at booth No. 219.
