Chipotle has launched a new option for its popular burritos and bowls: Cilantro-Lime Cauliflower Rice.

Chipotle has launched a new option for its popular burritos and bowls: Cilantro-Lime Cauliflower Rice.

Chipotle tested the new item in its restaurants in Denver and across Wisconsin earlier this year after receiving frequent requests for cauliflower rice to be added to the menu, according to a news release.

The company estimates that nearly one-third of the orders including cauliflower rice that came in during those test market launches were from new customers or infrequent visitors — a statistic that appears to show the new ingredient could help Chipotle expand its audience.

The inclusion of the cauliflower rice is an extra $2.

“Chipotle fans have been craving more plant-powered, better-for-you options that align with the latest health trends and emphasize the benefits of real food,” Chris Brandt, chief marketing officer for Chipotle, said in the release. “That’s why we are thrilled to offer cauliflower rice nationally and help our fans achieve their diet or lifestyle goals.”

The Cilantro-Lime Cauliflower Rice will be the foundation of a new set of Chipotle’s vegetable-rich Lifestyle Bowls, designed to cater to people on a variety of diets:

  • Whole30 Bowl: Cilantro-Lime Cauliflower Rice, chicken, fajita vegetables, fresh tomato salsa and guacamole.
  • Keto Bowl: Cilantro-Lime Cauliflower Rice, chicken, tomatillo-red salsa, cheese and guacamole.
  • Vegetarian Salad Bowl: Supergreens lettuce blend, Cilantro-Lime Cauliflower Rice, black beans, fajita veggies, fresh tomato salsa and guacamole.
  • Vegan Bowl: Cilantro-Lime Cauliflower Rice, black beans, sofritas, fresh tomato salsa, roasted chili-corn salsa and romaine lettuce.
