Side Delights says as potatoes, once again, top consumers’ list of favorite vegetables for the ninth consecutive year, they also shine this winter, according to a Potatoes USA Study.
The study also showed that from January to March of 2025, retailers saw a 2.3% volume increase in the U.S. potato retail sector. And 81% of consumers reported eating at least one serving of potatoes a week.
“People love potatoes especially around the holidays, and are finding new ways to enjoy them,” says Kathleen Triou, president and CEO of Fresh Solutions Network. “Creative consumers and trendsetters are turning leftover Thanksgiving mashed potatoes into donuts, sweet potatoes into rolls, or starting the day with a warm potato breakfast bowl.”
Side Delights says fall continues to inspire consumers with new or new-again twists on potatoes, such as spudnuts, a type of doughnut made with mashed potatoes or potato flour, which makes them softer and lighter than a traditional doughnut. Side Delights says food creator @by.floooo suggests using mashed potatoes to make the spudnuts.
Side Delights shares recipes for fried potato breakfast bowls, sweet potato yeast roles and more on its recipe site for additional ideas on new ways for consumers to enjoy the full portfolio of potato products.
