Olympia, Wash.-based Ostrom Mushroom Farms hopes to ship mushrooms from its new 39,000-square-foot growing facility in Sunnyside, Wash., in May, said Fletcher Street, director of marketing and sales.

“We are currently operating out of the Olympia, Wash., farm; we closed down a smaller farm about four years ago that was located near Bellingham, Wash.,” Street said.

“We are hip-deep in transitioning to our new farm in Sunnyside, and it has been very challenging due to construction delays.”

Ostrom anticipates volume of about 230,000 pounds per week at the new plant.

“Sunnyside square footage will be about equal to combining the two old farms,” Street said.

Better yields in the new operation will lead to increased volume, Street said.

And, Ostrom can expand further, if necessary, she added.

“We also have the land available in Sunnyside to double the farm when that is needed,” she said.
