Viva Fresh speaker to focus on science supporting plant-based diets

Fad diets such as keto, Paleo and South Beach come and go, but a plant-based diet is here to stay, says P.K. “The Nutrition Doctor” Newby.

Newby is a scientist, author and Harvard professor leading an education session May 1 at Viva Fresh, according to a news release. Hosted by the Texas International Produce Association, the Viva Fresh Produce Expo is April 30-May 2, in San Antonio.

Leading up the event, four industry members are taking the Clean Eating Challenge, and are charting their successes on the Viva Fresh website.

“With the launch of the Clean Eating Challenge, our participants are modeling what it means to embrace a plant-based diet with more fruits and vegetables,” Dante Galeazzi, produce association president and CEO, said in the release. “Each week, we’re seeing amazing results among the four participants, but we also want to understand the science behind diet-related diseases and how eating fresh, whole foods can help to prevent illness.”

Newby has 25 years of experience researching diet-related diseases and studying how people make food choices. Her newest book is “Food and Nutrition: What Everyone Needs to Know.” She has a doctorate from Harvard University, two master’s degrees from Columbia University, and was on the faculties at Tufts University as a research scientist and assistant professor and at Boston University as associate professor.
