To-Jo Mushrooms, Avondale, Pa., offers a full range of mushroom varieties, said Kevin Delaney, vice president of sales and marketing.

“In addition to growing the core conventional and organic mushrooms, we work with foragers throughout the country to offer unique specialty and wild mushrooms,” he said.

Baby bellas gradually are overtaking white mushrooms to become the category leader, he said.

“And today, consumers have greater access to organic mushrooms, which is helping lift the entire organic category up.”

Consumers look for freshness when shopping for mushrooms, he said.

Mushrooms are delicate and have a short shelf life.

“The faster we get mushrooms from our growing beds to the shopper’s cart, the better,” Delaney said.
